I used self rising flour to save time (leaving out the baking powder and salt) , and a bag of frozen peaches which I had tossed with a little sugar and lemon juice. Thawed those in the micro to get them to give up some juice. This was probably a lot more peaches than in a can, but I dumped the peaches, juice and all, on top of that wonderful sweet batter, dotted with unsalted butter, and the cobbler was juicy and perfect! Thank you for this wonderful and delicious recipe from your dear Grandmother! nancyhttps://www.blogger.com/profile/02819070687139707720noreply@blogger.comtag:blogger.com,1999:blog-2666571925777386634.post-70404844149651791822014-07-27T19:50:24.734-05:002014-07-27T19:50:24.734-05:00Made this tonight. I put sugar, lemon zest and the juice from a half of lemon on fresh peaches and put them in the fridge for a couple hours before making this dish. It was incredible, my family said it was the best peach cobbler they've ever had. It is wonderful, your grandma is awesome. The only thing I did differently is I used canned peaches that are in their own juice instead of the heavy syrup. This added the tartness I was looking for.
